Key Lime Pie Filling

  • 275 grams key lime juice
  • 275 grams sugar
  • 275 grams whole eggs
  • 2 grams agar optional
  • 350 grams butter
  1. Cook the first four ingredients together until boiling.
  2. Be sure to whisk constantly to avoid curdling.
  3. Remove from heat and blend with the butter to create a uniform emulsion.
  4. Strain into a new container and chill until ready to use.
