Quarantine Cooking Episode 21: Chewy Caramels

Chewy Caramels

  • 3 cups half and half divided
  • 2 cups sugar
  • 1 1/3 cup corn syrup
  • seasoning as needed
  1. Separate the half and half into 1 1/2 cup portions

  2. Combine sugar and corn syrup in heavy bottomed pot

  3. Cook sugar solution to 234F then add the first measure of half and half

  4. Cook this new mixture to 234F then add the remaining half and half

  5. Cook this new mixture to 250F and cast into prepared vessel

  6. Allow to set, or chill before cutting if needed, before eating

  7. Wrap in nonstick paper or chill unused caramel for later eating
