Here’s my recipe for Perfect Cookie icing, adapted from the recipe used by the Rosewood Mansion on Turtle Creek.
- 140 g egg whites
- 855 g powdered sugar
- 25 g lemon juice
- 5 g vanilla
- 250 g corn syrup
- 40 g oil
Blend all ingredients together until they form a thick paste.
Cover icing with plastic wrap pressed directly against the surface.
Allow to rest overnight, then glaze cookies accordingly.
This works best as a dipping glaze. To pipe, add 150g powdered sugar.
