Perfect Cookie Icing

My wife’s friend is preggers and we were thrilled to find out it’s going to be a girl, because that meant we could make use of my pastry skills at a “Sugar and Spice” themed baby shower.  I cooked up Strawberry Rose and Very Vanilla macarons, brownie bites with marshmallow fluff frosting, baby buggy sugar cookies, mini spice cakes with cream cheese frosting, and homemade croissants and marshmallows for the occasion.  I was kicked out of the house before the shower began, but I hear it was a smashing success!  Here’s my recipe for Perfect Cookie icing, adapted from the recipe used by the Rosewood Mansion on Turtle Creek.

Perfect Cookie Icing
Servings: 150

Ingredients
  • 140 g egg whites
  • 855 g powdered sugar
  • 25 g lemon juice
  • 5 g vanilla
  • 250 g corn syrup
  • 40 g oil
Instructions
  1. Blend all ingredients together until they form a thick paste.
  2. Cover icing with plastic wrap pressed directly against the surface.
  3. Allow to rest overnight, then glaze cookies accordingly.
Recipe Notes

This works best as a dipping glaze. To pipe, add 150g powdered sugar.
