Quarantine Cooking Episode 20: Roulade

  • 4 large eggs
  • 100 g sugar
  • 140 g all purpose flour
  • flavorings and extracts, as needed (optional)
  1. Preheat oven to 425F.

  2. Whip eggs and sugar together to a full ribbon stage.

  3. Fold in flour and any additional flavorings.

  4. Spread batter onto a silicone or parchment-lined tray.

  5. Bake at 425F until fully baked; cake will be springy and brown.

  6. Remove from oven and allow to cool in the tray for one minute.

  7. Remove carefully from tray to cool completely.

  8. Spread filling on top and roll cake or wrap, stack, and freeze for later use.
