Quarantine Cooking Episode 9: Zucchini Bread

Zucchini Bread

Ingredients
  • 100 g all purpose or bread flour
  • 20 g whole wheat flour
  • 2 g baking powder
  • 2 g baking soda
  • 5 g salt
  • 2 g cinnamon powder
  • 1 dash nutmeg
  • 68 g sugar
  • 68 g brown sugar
  • 87 g vegetable oil
  • 1 large egg
  • 100 g grated zucchini
  • 40 g nuts, roasted and chopped (optional)
  • savory herbs and spices to taste (optional)
Instructions
  1. Preheat oven to 350F

  2. Combine all dry ingredients

  3. Separately, combine all wet ingredients

  4. Gently mix wet and dry ingredients together until just combined

  5. Portion batter into previously-sprayed or lined molds and bake until a skewer in the middle removes cleanly

  6. Allow to cool partially in the pan, then remove to finish cooling
