Nowadays, “breakfast pastry” is a pale echo of its former glory. Recently, I heard my colleagues questioning why scones are so popular when they’re always dry and lacking in flavor. I decided to change their outlook with my Easy Homemade Scones, which are a slightly sweet vanilla version of this British classic.
- 725 grams flour
- 230 grams sugar
- 1 Tablespoon baking powder
- 1 teaspoon baking soda
- 4 Vanilla Beans scraped
- 240 grams goat butter room temp
- 440 grams Greek yogurt
- 3 egg yolks
Combine the dry ingredients in the bowl of a stand mixer.
Add the butter and mix together at low speed until butter has completely incorporated into the dry.
Add the liquid ingredients to the mixture and paddle until a mass forms. Do not over mix.
Turn out onto a floured surface and shape as desired.
Bake at 375F until the scones are firm to the touch and start browning gently around the edges, about 20 minutes.
Glaze when warm to seal in the moisture and flavor.
The best thing about these scones is their versatility. Add fruits or nuts to the batter or kick up the flavor with savory spices, cheeses, and chilies. Prep tonight, bake tomorrow, and you'll never question the breakfast pastry again.
