
- 90 g sugar
- 250 g flour
- 125 g pastry flour
- 20 g baking powder
- pinch salt
- 155 g butter
- 75 g creme fraiche
- 1 c fruit, currants, or chocolate chips (optional) up to 3 cups

Combine dry ingredients in a large bowl.

Cut in the butter or fat and mix until it has a sawdust quality.

Add cream and combine until smooth.

Wrap in plastic wrap and roll to 2" thick.

Unwrap and top with fruit or other mixings, if desired.

Fold into thirds, wrap, and refrigerate or freeze until ready to bake.

Preheat oven to 425F and bake for 12 minutes or until golden brown.

Cool completely and top with royal icing glaze, if desired.
