I would also like to congratulate fellow American pastry chefs Shawn Gawle, Chris Ford, and Sam Mason on being featured in this issue. These are three of the greatest pastry chefs in the world and they are constantly working to evolve the dining landscape. Be sure to follow them because great things are certainly in store for them.
